Ingredients:
6 Butcher's Choice of Atlanta, Inc. Boneless Pork Chops
1 cup chopped apple
1 cup chopped dried apricot
1/2 cup fresh or dried cranberries, (optional)
1 medium onion, chopped
2 celery ribs, sliced in 1/2" pieces |
1/2 cup apple juice
1/2 cup brown sugar
1/4 cup dry sherry or wine, (or more apple juice)
Salt, to taste
Freshly-ground black pepper, to taste
1 1/2 tablespoon cornstarch, mixed with
2 tablespoons cold water |

Instructions:
Combine all ingredients; cover and cook 7 to 9 hours on LOW. A half hour before serving, pour liquid into a separate container to skim off excess fat. Stir in cornstarch mixture and return broth to crockpot. Continue cooking on LOW until smooth and thickened. |

| Baked Chops & Macaroni Creole |

Ingredients:
4 Butcher's Choice of Atlanta, Inc. Boneless Pork Chops
1 tablespoon salad oil
1 cup sliced onions
1 clove garlic, crushed
1 pound canned tomatoes, whole, undrained |
1/2 teaspoon dried thyme
1 bay leaf, crumbled
Salt to taste
1/8 teaspoon pepper
2 cups. cooked macaroni, elbow, cooked |

Instructions:
Place chops on rack in broiler pan, broil on both sides until nicely browned.
In hot oil in large skillet, oven proof, saute onion and garlic, stirring occasionally, until tender, about 5 minutes.
Add tomatoes, thyme, bay leaf, 3/4 teaspoon salt and the pepper well.
Add cooked macaroni to tomato mixture, mix well. Arrange chops on top.
Bake covered 40 minutes or until chops are tender. |

| Barbecue Lime Pork Chops |

Ingredients:
4 Butcher's Choice of Atlanta, Inc. Boneless Pork Chops
1/3 cup Key West lime juice
2 tablespoons cider vinegar
|
1 tablespoon honey
1 teaspoon lime zest
Lime slices
Salt and pepper to taste |

Instructions:
Prepare marinade by mixing lime juice, cider vinegar, honey, lime zest and salt and pepper in large zip-top bag or in shallow glass dish. Reserve 1/4 cup marinade. Add pork chops to marinade, coat chops on both sides. Refrigerate 30 minutes. Preheat grill to medium.
Brush chops with reserved marinade and grill, turning once. Cook about 10 minutes on each side or until no longer pink. Place on platter and garnish with lime slices. |

Ingredients:
4 Butcher's Choice of Atlanta, Inc. Boneless Pork Chops
1 teaspoon vegetable oil |
1/4 cup Italian dressing
1/4 cup barbeque sauce |

Instructions:
Heat oil in large nonstick skillet; brown chops on one side over medium- high heat. Turn chops and add remaining ingredients to pan, stirring to blend. Cover and simmer for 5-8 minutes, until chops are tender. |

| Cajun Pork Chops & Rice |

Ingredients:
4 Butcher's Choice of Atlanta, Inc. Boneless Pork Chops
1 onion, chopped
1 green pepper, chopped
1 clove garlic, minced |
cajun seasoning, to taste
1/2 cup rice
1 can (14 oz. size) beef broth
1 teaspoon Worcestershire sauce |

Instructions:
Heat oven to 350 F. Brown the pork chops, onion, green pepper, and garlic together in small amount of oil in heavy skillet.
When chops are browned and vegetables are tender, place in a casserole dish with Cajun seasoning, rice, broth and Worcestershire sauce. Bake covered about 20 minutes or until rice is done and chops are tender. |

| Country Crockpot Pork Chops and Gravy |

Ingredients:
6 Butcher's Choice of Atlanta, Inc. Boneless Pork Chops
1/2 cup all purpose flour
1 1/2 teaspoon dry mustard
|
1/2 teaspoon salt
1/2 teaspoon garlic powder
2 tablespoons vegetable oil |
|
Instructions:
Combine flour, dry mustard, salt and garlic powder in a shallow dish. Dredge chops in flour mixture and set aside.
Combine remaining flour mixture with the chicken broth and pour into crockpot. Pour oil into a large skillet and place over medium high heat. Cook the chops in hot oil just until browned on both sides and then place in crockpot. Cook, covered on high for about 3 to 5 hours or until tender. Season with salt and pepper to taste. Serve with hot rice or mashed potatoes.
If the gravy becomes too thick just add a little water. If gravy is too thin, add a little flour. |

Ingredients:
4 Butcher's Choice of Atlanta, Inc. Boneless Pork Chops
1-1/2 cup Vegetable oil
3/4 cup Soy Sauce
1/4 cup Worcestershire Sauce
2 Tablespoons dry Mustard
|
2-1/2 teaspoons Salt
1 tablespoon Black Pepper
1/2 cup Wine Vinegar
1-1/2 teaspoons Parsley Flakes
1 clove Garlic, chopped
1/3 cup Lemon Juice |

Instructions:
Mix all of the Marinade ingredients together and pour over Pork Chops in a glass bowl or ziploc bag. Marinate for several hours, turning occasionally.
Grill over medium, indirect heat until desired doneness is achieved. |

Ingredients:
4 Butcher's Choice of Atlanta, Inc. Boneless Pork Chops
1/4 cup lemon juice
1/4 cup honey
1/2 teaspoon dried thyme
|
1/2 teaspoon fresh rosemary
1/2 teaspoon black pepper
2 tablespoons soy sauce
1 tablespoon dry sherry
2 cloves garlic, minced |

Instructions:
In a mixing bowl, whisk together until smooth the lemon juice, honey thyme, rosemary, black pepper, soy sauce, sherry and garlic. Add the mixture to a resealable plastic bag. Add the boneless pork chops, seal the bag after removing all excess air and place in the refrigerator for at least 4 hours.
Preheat grill to medium heat. Place the marinated pork chops on the grill grids and cook for 12 to 15 minutes, turning once and basting occasionally with reserved marinade. Discard any remaining marinade. |

| Honey Lemon Pork Chops |

Ingredients:
6 Butcher's Choice of Atlanta, Inc. Boneless Pork Chops
1 tablespoon vegetable oil
1/3 cup chili sauce
1/4 cup honey
1/2 tbsp, lemon rind
|
1 tbsp, lemon juice
1/4 tsp, salt
1/8 teaspoon pepper
1/2 cup sour cream
1 tablespoon flour |
|
Instructions:
Heat oil in fry pan. Brown chops on both sides.
Combine Chili sauce, honey, lemon rind and juice, salt and pepper. Stir into pan. Cover and simmer over low heat about 30 minutes.
Remove chops from pan and keep warm.
Whisk together sour cream and flour. Stir into pan juices. Cook until smooth and thick. Spoon over chops.

| Honey Pineapple Pork Chops |

Ingredients:
4 Butcher's Choice of Atlanta, Inc. Boneless Pork Chops
1 can Pineapple -- sliced
|
1/2 cup Honey
1/4 cup Pineapple juice
1 tablespoon Prepared mustard |
|
Instructions:
Cut a pocket into each pork chop and insert 1/2 slice of pineapple. Mix the remaining ingredients and drizzle a little over each chop.
Bake at 350 degrees for 1-1/2 hours, drizzling the sauce over the chops frequently.
Remove chops from oven, top each with 1/2 slice of pineapple. Return to oven for a minute or two to warm fruit. Heat any remaining sauce and serve with chops.

| Sweet and Sour Pork Chops Recipe |

Ingredients:
6 Butcher's Choice of Atlanta, Inc. Boneless Pork Chops
6 slices onion
6 slices lemon (unpeeled)
2/3 cup brown sugar
|
1-1/2 teaspoon salt
1/8 teaspoon pepper
3 tablespoons lemon juice
2/3 cup chili sauce
1/2 cup water |
|
Instructions:
Arrange chops in roasting pan. Place slice of onion, then slice of lemon on top of each chop. Blend remaining ingredients and pour over chops. Cover. Bake at 350F until chops are tender. (About 20 minutes) |
